Getting to know Me.................

I thought I would take some time and tell you some things about me.

1. I am a North Carolina native.
2. I am married to a retired USAF Airman.
3. I have two boys. 1 teenage and 1 preteen
4. I am an animal lover.
5. I adore the minions.
6. I collect Buddhas, dolphins, owls.
7. I am an Independent Designer with "Origami Owl"
8. I am going in to my final semester of college on August 17th.
9. I currently volunteer at a local non profit law firm.
10. I love the law.
11. I am a libra.
12. I love to read.
13. I love to shop, especially from other home businesses.
14. I have been married 15 years.
15. I am getting my degree so I can become a certified paralegal.
16. I love road trips although my body doesn't so much anymore.
17. At the age of 34 I was diagnosed with Severe Scoliosis. My lower lumbar basically looks pregnant.
18. I am working on changing my lifestyle to be healthier and more active.
19. I like taking pictures but do not get to practice with my camera too much.
20. I have a deep and abiding love for sweet tea, vanilla coke, dr. pepper, and twizzlers.

Cooking on a Saturday

I normally don't cook lunch but today I got the hankering for some home cooked beefy rice. I am not a person who cooks extravagant meals.  We like things simple and I am definitely good with that since that makes my nights to cook easy.

Hubby and I generally take turns or he will cook during the week since I am gone most of the day volunteering and I will cook on Saturday and Sunday. Sometimes we cook together, like with scrambled eggs & bacon. Hubby has deemed me the bacon maker since I cook it just right.

Back to the beefy rice, it is really simple and I got it off the back of a "Rice-a-roni" box. It is just :

1 box of beef flavored "Rice-a Roni"

1 lb of ground beef

beef stock (optional)

butter

water

You just brown the ground beef and drain the fat. Then throw in the "rice-a- roni" and follow the directions on the box. Now here is where I add the beef stock instead of the water. I think it gives it more flavor. Today I only had about a 1/4 cup of beef stock so I used water for the rest.

I also threw in some frozen biscuits in to the oven to go with it and lunch is done. The biscuits are what is going to take the longest since I put them in after I had already started cooking.

Wonderful Saturday

It is nice and sunny outside today. It is suppose to get up in to the 90's today. We have a busy day ahead of us. We are getting together with some friends and that will be nice.

Not much else planned for the weekend other than family time, laundry, and other house chores.

We are hopefully going to have the opportunity to get in the pool.

It's Monday again....

I hope you all are doing well. It is back to being Monday again. Sometimes I dread it being Monday but others I don't and happily today is not one I am dreading so far.

Hubby is doing the Job hunt thing and I am going to be working on my senior project for my senior capstone class. I have a load of research I need to do.

I will be glad when I am completely done with this whole school thing. Don't get me wrong, I have enjoyed most of it with a few exceptions such as Algebra class, Symbolic Logic are the two that stand out the most.

The boys are going for their monthly visit to grandmas and I am looking forward to the quiet time. I should be able to knock out some decent work on my project.

Oh Hey Friday 6/12/2015



This has been a really crazy week I tell you! It started out with a 6 + hour drive that I really did not need to do and ended up with my back in a lot of pain. So I have been trying to take it easy for the week.

Both of my boys are being promoted to the next grade. So I now have a sixth grader and an eighth grader.

O.. M..G... Oh my Golly Goodness my kids are growing up fast!

I have also realized that I am falling in to a rut of bad habits again. So now that I have realized it, I have to make the necessary changes in my routine to help combat those bad habits. I am in the process of trying to come up with a plan to work on that and that is what I will be working on this coming week.
